HEALTHY PANCAKES

The things my kids enjoy the most I try to make homemade & healthy if I can, adding healthy ingredients wherever I can. These are made with white & whole wheat flour, just 3 tsp sugar & flaxseed meal that you can’t taste at all.

Serves: 8-10
Ingredients
  • 2 cups flour (white or whole wheat or a mix)
  • 3 tsp. sugar
  • 1½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tbsp. flaxseed meal
  • 2 cups milk
  • 2 eggs
  • 2 tsp. vanilla extract
  • ¼ cup butter melted. Extra butter for pan
Instructions
  1. Mix all dry ingredients. Flour, sugar, baking soda/powder, salt, flaxseed. Mix well.
  2. In separate bowl mix together milk, eggs, vanilla.
  3. Add milk mixture to dry mixture and mix well. Add butter and mix. Batter will be a little lumpy.
  4. Use griddle or nonstick frying pan, medium heat. Use little butter to coat pan. Spoon ¼-1/3 cup of batter for each pancake. Wait for bubbles to appear on pancakes than flip and let cook for another 20-30 seconds. Do not press on pancakes or they will be not be fluffy.
