I don’t know about you guys, but I love having eggs for breakfast. They are healthy, full filling and options to make them are endless. Whatever veggies I have on hand I add them to my morning eggs. It’s a great way to use up leftovers as well. This recipe is a Frittata. Frittata means “fried” it’s an Italian version of an omelette. Few differences how it’s made but again very similar to an omelette or quiche. I hope you enjoy my version of this Italian Frittata.
EGG and VEGGIE FRITTATA

Ingredients
- 5 Eggs
- 1 cup spinach, chopped
- 1 small potato, peeled and thinly sliced
- ½ red bell pepper, sliced
- ½ med. onion, sliced
- 1 garlic clove, minced
- ½ tsp. dried rosemary
- salt/pepper to taste
- ¼ cup grated Parmesan cheese
- 1-2 tbsp. olive oil
Instructions
- Use frying pan that is oven safe as well. On med. heat add oil to pan and add potatoes and onions, salt/pepper and rosemary. Let cook for 10 min, or until potatoes are slightly tender.
- Add the garlic, spinach and bell pepper . saute for 30 seconds just cooking out the rawness of the garlic.
- Beat eggs in separate small bowl and pour evenly over veggies. Let eggs set for a little bit. Add cheese evenly. Turn oven to high broil. Place pan under broiler just til cheese melts and eggs are fully cooked.
