THAI BASIL CHICKEN (Pad Horapha Gai)

THE PREFECT PINA COLADA

This cocktail or mocktail gives me all the tropical feelings. I have used frozen pineapple, pineapple juice, cream of coconut,lime and some ice. The important ingredient is cream of coconut, this is what will really give you that amazing authentic Pina Colada flavor.  The rims of the glasses are dipped in Mexican chili lime seasoning called Tajin. This easy chicken marinade infuses chicken with great combination of flavors. The overnight marinade ensures the chicken breast stays moist.  By grilling the chicken it adds amazing flavor. You can always add little Greek or regular yogurt to to the marinade to add some flavor with a delicious coating around the chicken. But I have been keeping it simple and lower in calories. If you pan sear the chicken you can make a sauce with the drippings with little butter, flour, lemon juice, salt/pepper.

BEST CHEWY CHOCOLATE CHIP COOKIES

Delicious easy chocolate chip cookies with a slight crispy edge and chewy center.  Fresh homemade Chocolate Chip Cookies are the next level when it comes to flavor and texture. This recipe is pretty straight forward with basic ingredients.

RECIPE NOTES

Make sure the butter is soft at room temperature. Before you start leave the butter out for 1-2 hrs. Even if the butter still has a slight chill that will be fine, but don’t melt the butter.

I have used both light brown and dark brown sugar for these cookies. I do feel that dark brown gives more flavor and a nice color to the cookies.

I did not feel the need to chill the dough. I bake them right away. If you feel the dough is very soft you can refrigerate than bake. You can freeze the dough. Just shape into individual size cookie ball put on a tray let them freeze just enough to handle them. Than transfer to a freezer bag. When you are ready to bake place on cookie sheet with parchment paper and let them thaw than bake accordingly.  I have not baked cookie dough from frozen.

Do not over bake cookies, even a few minutes past baking time they will harden. Once baked take off the hot cookie sheet and cool on rack.

The instant espresso is optional. I like the flavor of espresso with chocolate, brown sugar and vanilla extract.

Keep baked cookies covered up to 4 days. Keep cookie dough in airtight container in the refrigerator for up to 4 days.

Keep in mind all ovens have a slight different temperature. I baked these at 375 F. If you feel like your oven is very hot at this temperature than bake at 350 F.

ROASTED CAULIFLOWER CURRY

Cauliflower curry is one of my favorite Pakistani dishes. It’s also a family favorite and is on the menu at any hosting. This side dish has all the flavors of a delicious cauliflower mix vegetable curry but it’s very light and only made with 2 tablespoons of olive oil. Usually you need more oil to sear tomatoes and onions to create a thick base for the curry.  Though I believe any dish made at home is already healthier, but I wanted to make this even lighter on the calories but keep the flavor of this staple dish. I wanted to share a very light healthy recipe today.  Adding a fish like Salmon to your weekly menu is a great way to boost essential nutrients. Fish in general has lower calories and saturated fat compared to other meats. It’s a good source of protein, fatty acids, essential vitamins and minerals. There is also no need for tenderizing or marinating fish, so that makes it prefect for a quick healthy weeknight meal that is full of flavor.
